- 1½ cup canola oil
- 2 cups sugar
- 3 eggs
- 3 cups flour
- 1 tsp salt
- 1 tsp cinnamon
- 1 tsp baking soda
- 2 tsp vanilla extract
- 3 cups peeled apples, thickly sliced
- Preheat oven to 350.
- In a medium bowl, beat the oil and sugar together.
- Add the eggs and beat until creamy.
- In a large bowl, sift the flour, salt, cinnamon, and baking soda.
- Stir in the wet mixture.
- Add remaining ingredients and stir to blend.
- Pour the batter into a greased and floured tube or Bundt pan.
- Bake for 1¼ hours.
- Cool for an hour.
- Flip pan onto a platter and sift powdered sugar on top.
- The cake freezes beautifully.
